Southwestern Omlette


3-4 Eggs, beaten

1-2 tbsp Oil

1 tbsp green bell pepper, diced

1 tbsp onion, diced

1/4 cup cheese, shredded

2 tbsp salsa

1 tbsp sour cream

1/2 avocado

Pour your oil in a hot pan, and add the bell pepper and onion. Cook until the onion is translucent and the bell pepper is soft. Remove and put to side. In the same pan, add your 3-4 beaten eggs. Let cook on medium without disturbing. Flip after 3 minutes. Add cheese and cooked veggies to the omelette. Fold over. Place on plate and top with salsa, sour cream, and avocado. Sprinkle with salt and pepper and enjoy!
