Keto Pumpkin Spice Egg Loaf
Ingredients: 8 tbsp (a stick) grass fed butter 1 (8 ounce) package of cream cheese 8 eggs 1/4 cup sweetener (I use ketologie sweet like sugar) Splash of vanilla extract 1 tsp ground cinnamon 1 tsp pumpkin pie spice 1 tsp apple pie spice 1/2 cup purée pumpkin
Instructions: Preheat oven to 400° Melt the butter and cream cheese for 45 seconds in microwave. Add all the ingredients into bowl with melted butter and cream cheese. Blend up with hand mixer or kitchen aid. Make sure it’s well blended! Pour into well greased bread pan. Bake at 400° for 35 minutes! Let cool for 30-40 minutes before cutting to slices. It’ll deflate after it cools - that’s normal.
You can (and should) pan toast it in a skillet with butter, to add some crisp to the outside. Top with some sugar-free syrup and whipped cream. It’s the PERFECT french toast.
