Keto Zuppa Toscana

1 lb ground sausage (I used breakfast sausage links and removed them from the casing) 1 block of cream cheese (8 tbsp) 2 liters chicken broth (64 Oz) 1 large white onion, diced (about 1 cup) 2 cups fresh spinach 1 cup mozzarella cheese 1 8 oz jar sundried tomato


In a large pot or crockpot, cook the sausage on high until it thoroughly cooked. Add the onion, broth, cream cheese and sundried tomatoes. Let simmer for about 30-40 minutes, mixing occasionally. Once ready to serve, top with spinach and mozzarella cheese. Salt and pepper as necessary. ENJOY!
