Keto Taco Casserole
Ingredients: 1/2 lb ground beef Pinch of salt, red pepper & adobo seasoning 1/2 red bell pepper, chopped 1 small white onion, chopped 1/2 jalapeño, sliced 1 cup mild salsa 1 cup black soy beans (swipe for brand and carb count) 1 cup cheese of choice (I used mozzarella) Other taco toppings you might want: sour cream, ranch, lettuce, hot sauce, pico, etc.
Directions: Cook seasoned beef in skillet on medium, once cooked added the pepper, onion, and salsa. Let that cook down. Once the pepper and onions are tender, transfer it to a dish. Then, cooked the black soy beans in the skillet, strain the excess fluid. Threw a cup of them on top of the dish. Top with cheese. Broiled for 5-7 minutes until the cheese melts. Throw a dollop of sour cream on top and ENJOY!
