Keto Peanut Butter Brownies

Brownie Ingredients: · 3/4 cup salted Butter melted · 1 cup almond flour · 3/4 cup sweetener (erythritol) I used @ketologie sweet like sugar replacement. · 2 Eggs beaten · 1/3 cup Cocoa powder ( I used ghirardelli unswetened cocoa powder) · 1 teaspoon Baking soda · 1 teaspoon Vanilla extract · pinch Salt Peanut Butter Topping: 1/2 cup peanut butter mixed with 1 TBSP sweetener of your choice. ________________ Mix everything except for the peanut butter topping together with a hand mixer. Make sure its mixed well! The batter should be like a typical brownie batter. Not super thick but not loose or runny. Add almond flour as needed to get it to the right consistency.

Pour into a 8x8 pan. I put down parchment paper first because I like to make sure I can pull it out quickly without it sticking to the pan. I spray the parchment paper with sprayable ghee. Add drops/dollops of the peanut butter mix to the top. Run a knife or fork around so that it spreads along the top.

Bake at 350 degrees F for about 30 minutes. Don’t worry- the brownie contents in the pan will be mushy, and will wobble/shake if you shake the pan. It will harden once it’s out of the oven and cools. With that being said, let them cool completely before cutting into them!
