Keto Buffalo Chicken Pizza

Keto Pizza dough:


1 and 3/4 cup melted mozzarella cheese

3/4 cup almond flour

3 TBSP cream cheese

1 egg

Buffalo Chicken Topping:

1 chicken breast, chopped

1 tbsp butter

2-3 tbsp cream cheese

3/4 cup mozzarella cheese or pizza cheese

1/2 cup of buffalo sauce

1 or 2 pinches of parsley

Directions: Melt the cheese in the microwave until super runny, add the cream cheese and mix! Melt again if necessary. The key is to have really hot cheese so it’s really runny.

Add the almond flour and egg. Mix.

Use your hands and knead like dough. If it’s sticky, just wet your hands and keep kneading.

Once all mixed up- roll into ball and place on parchment paper (not wax paper) place a sheet of parchment paper on top, press down and roll out the dough with a roller.

Push up the edges, season and stab with a fork.

Bake at 425° for 8-10 minutes!

In the meantime, add diced chicken breast and 1 TBSP butter in a sauce pan on medium heat. Once that is cooked, add 2-3 TBSP cream cheese and mix it until it is melted and mixed with the chicken.

Remove the pizza dough, add a layer of cheese (about 1/2 cup mozzarella). Then put the creamy chicken on top. Add top layer of mozzarella, and swirl your favorite buffalo sauce - I use frank’s red hot! Put back in oven for 5-7 mins or until cheese melts! Then, top with a pinch of parsley and ENJOY!
